This keto hot chocolate is a rich, creamy mug of cocoa made with unsweetened almond milk, a splash of heavy cream and real cocoa powder, sweetened with a sugar-free sweetener and topped with whipped cream. It takes 5 minutes, makes 2 mugs, and has about 5.5 g of net carbs per serving, compared with about 29 g in a 250 ml mug made from a regular cocoa mix, based on USDA values. A pinch of salt and a little vanilla make it taste like the real thing.

- Serves: 2
- Prep time: 2 minutes
- Cook time: 5 minutes
- Total time: about 7 minutes
Ingredients
- 360 ml (1½ cups) unsweetened almond milk, or another unsweetened plant milk
- 60 ml (¼ cup) heavy (double) cream
- 2 heaped tablespoons (20 g) unsweetened cocoa powder
- 1 to 2 tablespoons powdered erythritol, allulose or a stevia blend, to taste
- ½ teaspoon vanilla extract
- A small pinch of salt
To serve
- 30 g (2 tablespoons) heavy cream, whipped, or a spoonful of unsweetened whipped cream
- A light dusting of cocoa or a little grated 85% dark chocolate (optional)
Method
- Put the cocoa powder, sweetener and salt in a small saucepan. Add about 3 tablespoons of the almond milk and whisk to a smooth paste. This stops the cocoa clumping.
- Whisk in the rest of the almond milk and the cream.
- Warm over medium-low heat for 3 to 4 minutes, whisking often, until steaming hot. Don’t let it boil, or the cream can separate.
- Take it off the heat and stir in the vanilla. Taste and add more sweetener if needed.
- For a frothy top, whisk hard for 30 seconds, or use a milk frother.
- Pour into two mugs, top with whipped cream and a dusting of cocoa, and serve.
Tips for the best keto hot chocolate
- Use powdered sweetener. Granulated erythritol can leave a gritty texture and may recrystallize as the drink cools.
- Make a paste first. Cocoa powder doesn’t dissolve easily in cold liquid.
- Don’t skip the salt. A tiny pinch reduces bitterness and makes the chocolate taste richer.
- Choose natural or Dutch-process cocoa. Natural cocoa tastes brighter and has more flavanols; Dutch-process (alkalized) is milder and darker.
- Adjust the creaminess. More cream makes it richer and higher in calories; more almond milk makes it lighter.
Flavor variations
- Mocha: add a shot of espresso. Our guide to coffee on keto has more ideas.
- Spiced: add a pinch of cinnamon, nutmeg and a tiny pinch of chili.
- Peppermint: add a drop of peppermint extract.
- Orange: add a strip of orange zest while heating, then remove it.
- Extra rich: melt 10 g of 85% dark chocolate into the hot milk.
- Dairy-free: use canned coconut milk instead of cream, and coconut whipped cream on top.
Nutrition per serving (estimate)
One serving is one mug with whipped cream. These figures were calculated from USDA FoodData Central values for unsweetened almond milk, heavy cream, unsweetened cocoa powder, vanilla and salt. Sweetener isn’t included, because erythritol, allulose and stevia add almost no calories or net carbs.

| Fiber | 4 g |
| Net carbs | about 5.5 g |

Most of the fat and saturated fat come from the cream. It’s a rich treat rather than an everyday drink: one mug has about half of the saturated fat limit for someone eating 2,000 calories a day, based on the WHO’s advice to keep saturated fat under 10% of energy. Halving the cream and skipping the whipped cream topping roughly halves the calories and saturated fat.
Cocoa powder itself is low in sugar and provides fiber, iron and magnesium. Our article on dark chocolate explains cocoa’s benefits and limits.
Contains: milk (cream) and tree nuts (almond milk). Use a nut-free plant milk if needed.
Choosing a sweetener
Powdered erythritol, allulose and stevia or monk fruit blends all work. Avoid maltitol-based sweeteners, which raise blood sugar more and can upset your stomach. Our guide to sugar alcohols on keto compares them, including the 2023 erythritol findings.
Make-ahead hot chocolate mix
Mix 100 g of unsweetened cocoa powder, 100 g of powdered sweetener and ¼ teaspoon of salt in a jar. Use 2 heaped tablespoons of mix per mug of hot almond milk and a splash of cream. It keeps for months in a cool, dry cupboard.
Common questions
Can I make it in the microwave?
Yes. Whisk the cocoa, sweetener and a little milk into a paste in a large mug, add the rest of the milk and cream, and heat in 30-second bursts, stirring each time, until hot.
Is store-bought hot chocolate mix keto?
Most aren’t. Regular mixes are mainly sugar, with some milk powder and cocoa. Check labels for sugar-free versions and their sweeteners.
Can children have keto hot chocolate?
The cocoa contains small amounts of caffeine and theobromine. An occasional small mug is fine for most older children, but there’s no reason to give them sugar-free sweeteners regularly.
Safety note: Keto isn’t suitable for everyone. If you have diabetes, kidney or liver disease, take regular medication, or are pregnant or breastfeeding, talk to your doctor before cutting carbs this far (why it matters).
